Masahiro Gyutos are one of the gold standard Japanese Chef's knives. From the factory, for a budget knife, these have unbelievable sharp edges. 

These Gyutos do have a 70/30 asymmetrical bevel, so they will be for Right handed users only. 70/30 bevels are easier to sharpen than 50/50 bevels.
