The Misono - Paring Knife - 80mm is expertly hand-forged from Stainless Steel. With a hardness rating of HRc. 60, this knife boasts exceptional sharpness and edge retention, making it easy to maintain and use for precise slicing and dicing. 

The blade is made from AUS-8 (HRc. 57), a high carbon 13 Chrome Molybdenum stainless steel that has strong corrosion-resistance, great durability, high cutting performance and is easy to re-sharpen.
