Sourdough 101 (5 x 2hr Weekly sessions)
From growing and naming your own starter, to scoring and baking your first loaf, this five-week course walks you through the full sourdough process:  mixing, fermentation, shaping, and bake day. This is the class to take if you are serious about learning this craft. 

You'll walk away with a reliable go-to recipe  and a solid foundation if you want to keep building your skills with us down the line.

Series of Classes: 5 x 2hr sessions, same time weekly, for 5 weeks

$475 price & commitment for the entire course.

Thursdays, 6-8pm. Dates: 7/30, 8/6, 8/13, 8/20, & 8/27

What you'll learn in this course:

  • Starting Out — the science behind sourdough, starter maintenance, and creating your own starter from scratch.

  • Into the Mix — hand-mixing dough with techniques including gluten development, autolyse/fermentolyse, the Rubaud method, and slap & fold.

  • Bulk Fermentation — stretch & fold, folding for structure, timing, dough temperature, and knowing your constraints and goals.

  • Handling & Shaping — bench knife skills and different shaping techniques.

  • Scoring & Baking — lame options, scoring technique, baking methods, and oven set-up.

Sourdough Geeks x Good Kinsmen Baking Classes with Baker James Bridges

James Bridges is a chef, baker, and the kind of obsessive who went from Michelin-recognised kitchens, to his own micro-bakery supplying the best restaurants in Louisville, KY. Additionally, James was headhunted to build the bread program for a premium farm-to-table concept in the same city. Today, as founder of the Sourdough Geeks online community, he splits his time between 'breaducation' for its Bakers Club members and coaching artisan bakery owners through consulting work.

James and his business partner (and wife) Claire are delighted to be partnering with Good Kinsmen to bring in-person classes for those who want to learn or improve their sourdough bread baking skills.
